Just made these for Super Bowl Sunday. My husband prefers lemon pepper wings, so I followed the brining/drying steps and sprinkled a generous amount of an organic lemon pepper seasoning and baked as written. They were amazing and so crispy. Thanks! I’ve been afraid of making wings until now.

I made this as written 2x. Once in a 9″ round pan and once in an 8″ square pan. They both turned out perfect. I also made icing as written (all mixed in a bowl and then microwaved in 15 sec. increments; stirring very well before each additional heating). No problems whatsoever. I was able to perfectly spread over both cakes. For the 8″ pan, I didn’t add all the batter (had enough for 2 additional cupcakes). It still needed about 35 minutes in the oven while the 9″ pan need closer to 40 min....

This was delicious! When first looking at the recipe, I thought ‘too much time for tonight’s late dinner.’ But I talked myself into it and it was worth it. It actually comes together very quickly with not that many steps. It looks beautiful and is so delicious! I used baby kale for the greens. I think I’ll be using this recipe at potlucks in the future to surprise people with how wonderful and bright a pasta salad can actually taste.
