THESE WERE SO GOOD!! I was a little nervous because some folks had issues with them, but ours turned out perfectly. We soaked our chickpeas (from Rancho Gordo) overnight with salt, drained for about an hour, and processed about as fine as the processor would get them. They were a tiny bit crumbly but held fine in the oil, and were soooo delicious. Will definitely make again!

We cooked in the Instant Pot for 80 minutes total and I think we would have preferred a bit longer since it wasn’t quite fork tender. Great flavors, though – I find it strange that other folks found it bland. Is there a reason for using unpeeled garlic rather than peeled garlic? Fishing out the peels seemed like a lot of work (though the recipe was otherwise basically no work, so not a big deal).
