SO, SO GOOD! I didn’t have panko but subbed rolled oats quickly blitzed in my blender to make them something between quick oats and oat flour. I used a franken-mixture of leftover navy beans I had cooked from dried and a can of a tri-bean blend. The volume only came to about 2.5 cups (I will aim for 3.5 next time) so they were a little too wet and delicate, but the flavor is OUT OF THIS WORLD GOOD. Tasty! Easier to handle in the pan than the also delicious fritter b/c of the batter. I used pancetta instead of ham – and added some dill and green onions because I had them in the fridge! Just needs a side of sour cream that I am regretting is not in the fridge this evening!

Made this as I was looking for a casserole to save my sanity during these days of COVID-we-must-cook-a-lot-times. Made a double recipe with wheat berries instead of farro (what I had on-hand) no capers and added cannonelli beans. Turned out QUITE dry. The flavor packed a punch and oddly the more we ate it the less we minded the dry consistency. Willing to try try again but will quiche-ify it or add a Bechamel. :) Deb, more casseroles pls to save our quarantined souls!

This was delicious! I used dried basil instead of tarragon because it’s what I had, added four slices of bacon (cooked separately, chopped up, and added) and about a tsp of red pepper flakes. Recommend!

I was nervous because Deb responded elsewhere recommending against malted milk powder, but the nutritional profile for powdered buttermilk vs powdered milk was just about the same, and I couldn’t imagine more buttermilk flavor would hurt. In reply to Amanda. I baked a 9 inch cake and had similar issues with the cake taking longer to bake and being too soft. My first layer crumbled when I flipped it out of the pan, my second ripped a chunk out of the center top when I flipped it right side up, and my third survived flipping onto parchment paper and then gently peeling the parchment paper off when it flipped right side up.
