Comment on whole lemon meringue pie bars by Angie

Just made these and I had the same gooey soggy problem that others had but…I suspect it’s because I didn’t follow the note about how much lemon to actually use and it made the crust soggy. My meringue also didn’t fluff up but I think that’s because beat them too long. It looks like it will taste good but I need to just pay better attention to the recipe.

Hi Deb, I made this the past two Friday nights! The first time I did the shortest rise and it worked brilliantly. The second time I did the longest rise and the dough was huge and practically liquid. It didn’t cook well either: crispy edges but very uncooked middle…. It had been very hot here in London so perhaps that was the reason for the odd dough?
