Comment on blood orange, almond and ricotta cake by Dani

This was such a hit! I didn’t have almond flour so I ground my own almond meal, unfortunately my food processor has seen better days so the almonds weren’t ground very fine which made the cake rather mealy (if that’s the term I’m looking for). It did also take maybe an additional 30 minutes to bake but that could have been due to the course almond meal instead of flour I suppose. Topped it with a mascarpone cream for an amazing dessert! Thank you for such a beautiful recipe!

Absolutely adored this! Substituted about half of the water for fish sauce and it added this next level of umami. Vegan margarine worked fine in place of the butter although I would cut back or leave out the kosher salt if using it as I find it saltier. Didn’t have parchment paper so I greased a nonstick pan and baked the popcorn for 8 minutes and then it sit to firm up. Will definitely be making it again.

Made this tonight in my Instant Pot and it was SO good. I have a 6 qt. instant pot that I’m still experimenting with. I almost doubled the recipe since I happened to have enough ingredients, except I just used x3 14 oz. cans of tomatoes and still only 6 cups of water because that’s all I could fit in the pot!
