These are just barely sweet… in a good way. We were hoping to spread caramel on them and then dip them in chocolate but we’re not going to have any left for that. They did take forever to bake in my oven and I eventually just removed them from the oven, even though they werent quite golden brown.

In reply to Corrente. I plan to substitute raw chevre, mostly because I have tons of it but I think it should work nicely here. Is that an option for you? Our chevre is quite creamy but if you can only get crumbly chevre then mix it with a liquid of your choice (milk, water, thin yogurt) to get the consistency more like ricotta.

I made a half recipe and it’s delicious BUT it was raw in the middle at the 30 minute mark. It needed a lot more time (that I didnt track but I am guessing another 20). I see this comment from a few others and I am wondering if the size of the roll could be making the difference. Mine looks perfect and just as I would expect a babka to look so I am unsure where I went wrong. Anyway, it is delicious and it was quite easy.

These are really great rolls but we realized that we’re just not a “roll” family. We would rather have a slice of really good bread with dinner than a roll. I might try these again with extra garlic and serve them with spaghetti and meatballs as they remind me of garlic knots. That said, they were easy to make and fun to eat.
