I made this with farro instead of orzo, pre-cooked with fresh tomatoes (instead of paste) and veg broth. Also used provolone and a dash of goat cheese rather than mozz (hello quarantine make-do cooking). Came out delicious! Tastes almost like pizza, no joke, except the eggplant steals the show. I think I’ll add capers and olives next time. Thanks for the recipe!

Cooked this last night and it’s by far the best I’ve ever made. I prefer it to Marcella’s, my previous standard, because the tomato paste makes it richer and smoother (and more tomato-ey). Honestly it was hard to put this on pasta as opposed to just eating it with a spoon. Only adjustment I made was two stalks of celery since I like that extra vegetal note.

These are amazing. The biscuits are perfection and so easy. I picked the 5 pints strawberries (from my CSA) this afternoon in 90 degree weather. Came home and made these. It was so worth it, even the 40 minutes in the heat. I am freezing the rest of the strawberries to make this for my family this weekend. First time we are together in months (Covid). Can’t wait to share them.

Adding two cans of corn is essentially doubling the bulk of the recipe—imagine adding two more cans of beans instead—so it stands to reason that in doing so, one would need to up the spices a bit to compensate.
