In reply to Lauren Chrystal. I have successfully made them up to the point of filling and store separately for a couple days in the fridge. Just put the filling in a ziplock and snip the corner to fill before serving. The whites stayed fine—- I think the yellow part would get “crusty” if filled early.

Absolutely delicious! I added a charred/peeled/chopped poblano pepper as I was transferring the batter. I probably should have baked it for another 5 minutes or so (it was very high — spilled slightly from my 8″ cast iron skillet as it rose), but even a bit underdone we all thought it was pretty close to perfect. Thank you!

The cookie shortcuts are great on this! I did seriously regret not using a piping bag. The ziplock was a disaster – spilling out the top onto my hands even though it was sealed, and globbing up at the beginning of every line before the flow would start. I think a piping bag would have been less fussy (and result in less ugly cookies) for me!

OMG! I made these over the weekend for a friend who is about to give birth and they were ah-mazing. (It didn’t hurt that the chocolate chips were still warm and melty when we ate them.) Five star! My only issue was that they seemed to bake unevenly (this could be my oven) and I wasn’t 100% sure when they were done. The instructions to wait for them to be golden brown all over weren’t that helpful. But I can’t recommend them highly enough. They are sorta healthy too!

Perfection! I’m not a big blueberry muffin fan, but these have converted me. Not overly sweet and so flavorful. We make these a few times a month to pop in the freezer and grab for a quick breakfast or snack. We love to use frozen wild blueberries as we prefer their smaller size. We usually make them using a mini muffin tin for our toddler, and they are the perfect bite sized treats. Thank you!
