Used pecans and dried cranberries in place of walnuts and raisins and hand grated the carrots, cooked in a regular old pan (no cast iron or griddle) on medium heat for about 5 or 6 minutes per side and they came out beautifully. I do think that portion size is key, I used a heaped 2 tbsp, measure which I found to be plenty. Thank you for helping me use up some of my (tasty) glut of farmer’s market carrots.
