In reply to Lorraine. Lorraine, my daughter in law has lactose intolerance. When she visited this summer we successfully used a plant butter in baking recipes. I found an unused stick of it in the fridge this weekend and used it (along with a stick of dairy butter) when I doubled this recipe. The cookies turned out great.
