In reply to Jen. It’s definitely not a heavily sweet babka. Actually, most aren’t. Here, the sugar syrup does the heavy lifting. I’ve been torn about the word “better” since publishing this recipe with the title. It’s unfair to the original babka; it’s not “better” just a different stye — more krantz cake/Israeli-style while the other is more Eastern European. I *finally* made this after years of eyeing your other chocolate babka recipe. Then when I finally decided to make it, I saw you had this better babka recipe! Overall, it was a hit. I had some similar concerns with it not rising much. I added a 30 minute rise in a warming draw prior to baking and that seemed to help. My filling was also more like a ganache and not dry at all. Just made it messier to roll, but worked out. I do have one question. I used 4.5 oz of a bar of Scharffen Berger unsweet...

In reply to Jen. I have made these at least 3x without the bread in it because I don’t eat grains, and they were still very good. I’m not a lamb person, but I liked these, especially with homemade hummus and tzatziki. I made a greek salad to go with it also. I didn’t do the zucchini skewers, just the lamb. I did the lamb in the shape of hotdogs and threaded them lengthwise.

I’ve made this twice now and both times it was so good! I love using this higher heat method to roast chicken, and adding the cabbage is just genius. I wish there was a way to get even more cabbage in the pan! Thanks for such a simple recipe that has a deliciously big payoff.
