I used 10-min farro (from Costco) and cut the water down a smidge (1 1/4 cup) and put all the mozarella on top instead of stirring it in, because we are big fans on crunchy cheese-topped things in this house. It took 15 min in the oven and a few more under the broiler, and we loved it. Also, to make this weeknight-possible for me, I prepped and sauteed the vegetables the night before, and then just warmed it up in the pan, and then continued from the point where you add farro and water.

In reply to DTI. Haha! Don’t be embarrassed, I frequently eat a lazy man’s deviled egg for breakfast, aka a hard boiled egg smeared with dijon mustard, salt and pepper. I’m a dijon freak so I skip the mayo, lol!

I’ve made these three times now: twice with raspberries (perfect), and once with blueberries (soggy). This is what I get for messing with perfection. Arbiter of All Baked Goods (husband), said the blueberry version was “edible, nice flavor, just wet”. I guess raspberries have more fiber, and less water than blueberries? Anyway, will stick with raspberries from now on.

It’s going to be either that you have residue of fat or soap on the beaters and/or bowl you are using, or that the egg yolk broke a little and there’s yolk in the whites. Or that you are beating them by hand in which case it will take a long time to stiffen them! It’s worth trying again with fresh egg whites and washing the bowl and beaters thoroughly – maybe run a slice of lemon round the beaters and bowl as it will get rid of any traces of fa...

In reply to Jenn. The part of the recipe where you beat the egg whites and add the sugar is simply a meringue. That’s it. People have been making meringues for quite some time. If you’re having trouble getting your egg whites to stiff peaks, it would be a better idea to ask people in the comment section for some tips. Stating that the recipe “sucks” is simply untrue, since that the part of it that you’re complaining about has been used successfully for about three centuries.

In reply to Jenn. I haven’t tested it with instant yeast but I’d say go for it. I find instant yeast can rise a bit more slowly, or at least take longer to get started, which shouldn’t matter if you’re leaving it overnight. Here are comments from others who have made it with instant yeast instead:

Ok, I admit to not having read all 596 comments on this, but did you know you could make this with milk and water cold from the fridge if you use instant yeast? This is a weekend go-to for us and not having to fuss with warming stuff up really seals the deal.

I made this for a casual Sunday breakfast with my boyfriend and housemate. I loooved the lemon zest pop in the cake matched with the warmth from the cinnamon in the crumb topping. I used frozen blueberries from my backyard berry patch. The cake was an enormous success and deemed a “keeper recipe” by all three eaters. The cake is gone this morning, Monday. :)

I grew up seeing penne a la vodka as a bland catering hall dish, but when I saw this recipe I felt compelled to try it. It came out SO good! I followed the recipe exactly as-written, except I used penne instead of rigatoni. There was excellent depth of flavor, and sauce texture was perfect. Miles away from the Long-Island-communion-party offering I almost never enjoyed. Husband also loved it, so we plan to make this often.

We love these granola bars as a healthier option for bringing camping and hiking. They last a few days and they’re good enough that even when they crumble a bit the kids will eat it all up with spoons!
