I can’t believe something so simple is so tasty, quick to make, good both hot and cold, and pretty nutritious. I added some lemon juice at the end and won’t do without it in the future. I didn’t add any salt (I figured my canned beans and artichokes had enough) or pepper flakes, and it was seasoned well to my taste. The flavors in this recipe come out so full and roasty and delicious. I don’t like beany things, bean soups, cassoulet, stews with large veg chunks in them, the texture of them overwhelms a dish for me. So I take this amazingly flavorful soup and blend it at the end. You’re left with a very full, almost creamy soup with a little bit of bean texture. Delicious with avocado and cotija sprinkled on top.

After reading some of the comments about lack of browning, I was pleasantly surprised when mine was decently golden after the regular cooking time. After a pass under the broiler, it had a nice crunchy top lid and soft, creamy potatoes underneath. I used a glass pie plate and didn’t peel my potatoes. I probably had closer to 1.5 lbs of potatoes, kept the seasoning the same, and thought it was perfect. I’ll definitely repeat.
