Comment on strawberry rhubarb crisp bars by Leah

This is my new go-to crisp recipe. My modifications: – I used LSA instead of flour as I have a bag of LSA I want to use up. The nuttiness was delicious. – I used just under 1/2 cup of brown sugar and no sugar in the filling – the bars were still sweet enough for me. – I used almost a full 500 gram bag of frozen strawberries (it’s winter where I am) and they worked great. – I added some cacao nibs (maybe 2 tsps worth) into the mixture for the top. So tasty and next time I will add a few more.

Comment on smashed potatoes with sweet corn relish by Leah

Another longtime lurker just piping in to thank you for such a thoughtful, and genuine post. Other blogs have been irritatingly disingenuous and, like you said, performative, by cramming in “relative” content all at once. At the pace those stories have been going up, makes me wonder how many were tabled originally, and trotted out these past few weeks. Also just thanking you for years of fabulous, fabulous recipes.

Lowkey Trippin’ – Insecure Season 4, Episode 7 Recap

This post is in partnership with HBO. As always, thoughts and opinions are my own. The Run – Molly is at the Ethiopian restaurant being indecisive about her gluttony when she sees Issa come out the car. She hits that “look forward as if I see nothing” move we all know about but is then stunned when she sees her friend get back in the car and leave. Stunned! Andrew’s talking to his brother when Molly walks in, all puffed up and irritated. She tells him she saw Issa, who basically ran away from he...

Comment on simple, essential bolognese by Leah

This worked really well with Beyond Beef and canned coconut milk, for any other other vegan cooks out there. I let the sauce simmer for about half an hour–next time I might see if it holds up for longer. It was incredibly rich and satisfying after the 30 minutes, though!

Comment on braised ginger meatballs in coconut broth by Leah

Quarantine night 6,300 (seemingly). This was aces. Used some homemade turkey stock from the freezer, ground turkey and a package of chopped frozen spinach, defrosted and squeezed. I doubled the broth mixture and could basically just drink that. Meatballs were tender and perfect. This is going in my regular rotation. Excellent

In reply to deb. Three years after the fact, I’m responding to say that my oven always runs cold and I took mine out at 50 min and it was a tad overdone. Still delicious.

Comment on roast chicken with schmaltzy cabbage by Leah

In reply to Jean Robertson. I didn’t know that chicken was an herb to put on cabbage! My god was that cabbage good! Really the chicken was just secondary. Actually tertiary. Cabbage, then chicken skin, then chicken if you have any room left in your stomach after eating an entire head of cabbage on your own.

Comment on blondies, infinitely adaptable by Leah

Was hunting around on the internet for a better (chewier) blondie recipe and these are amazing! Browning butter was new to me and I will definitely be doing it again. The browning process took longer than I thought it would, but it was worth the wait for that intense nutty/carmally flavor. I subbed half the AP flour for ww pastry flour and it worked out great. 1 c. dark choc. chips and 1/2 c. toasted chopped pecans plus 1/2 tsp of cinnamon for my mix-ins. I added 1/2 tsp of sea salt and it seems...

Comment on carrot and white bean burgers by Leah

These were yummy, but this was the rare Smitten Kitchen recipe I’ll plan to tweak in the future. The carrot/onion mixture was absolutely delicious, but the two cans of beans added near the end made everything a little bland. Next time I’ll plan to add some spices and garlic, and maybe an extra egg for a binder. They held together, but just barely. I highly recommend using a food processor for the carrots and beans as suggested by others.

Comment on everyday yellow dal by Leah

Suggestions for substitutions for the coriander? I don’t have any on hand. I assume I can just up the cumin. I’m also planning on using curry leaves instead of cilantro (as I was gifted a couple of fresh stems) – will report back on tastiness!

Comment on carrot soup with tahini and crisped chickpeas by Leah

So delicious I promptly bought another kilo of carrots to make it with. My modifications resulting from a mixture of what I had on hand and what seemed like a good idea: – in the soup, I upped the cumin to 1 heaped tsp, did 1/2 tsp of tumeric, no coriander (didn’t have) and 1 heaped tsp of smoked paprika – I used low-sodium chicken broth as that’s what we had – I didn’t peel the carrots because I could not be bothered (they were very clean carrots as well) – I used zaatar instead of cumin for th...
