WOW! Making this again FOR SURE. Modifications: didn’t have dates, so mixed oil + lime juice + salt + red pepper flakes + a bit of sugar for sweetness, for part 1 of the recipe. Didn’t measure anything specifically, just eyeballed it. Also added ~2 c cooked, *cooled*, quinoa (cooked in water w/ a pinch of salt), in order to make it the starch and the vegetable of our meal tonight.
