Just made this and am proud of how it turned out. I overcooked it a bit but still nearly matched the desired results, normally my pancakes are rubbish. First time ever folding in peaked egg whites and managed to keep the peaks. I cut the recipe in half since it is just me, and it was still a lot of pancake. I didn’t skimp on the powdered sugar, which made it seem more perfect than it was. I had plum jam on hand so made a sauce mixing it with maple syrup.
