This is what I needed. I’m standing in the kitchen at 4:00pm drinking a glass (a small one…out of my grandmother’s Boopie juice glasses) because things feel so overwhelming. We eat our main meal at mid day because we are firmly entrenched in middle age and because we can, so I have eaten today (homemade potato soup with also homemade rye bread…and about 1/4 of the same grandmother’s recipe for chocolate pound cake).

Thank you for this! It was just what we were looking for, festive and not complicated. We had everything in the pantry except white chocolate so used regular chocolate chips. We made with gluten-free flour and a 1/4t. xantham gum. It turned out great! The kids loved it (ours ended up with a little more powder-sugar snow than yours!). We ate it for the Solstice and read the book The Shortest Day.

Thank you, thank you, thank you for weights and not just one large this and one small that. Also thank you for paring down the recipe that can easily be double or tripled if you want but I don’t have to figure out weird adjustments or how to get 1/2 an egg. One comment – I will probably add Raclette because I love cheese in my latkes. One question – does 1/4 cup of potato starch = 1/4 cup of flour or is there a weight involved there?

This was fantastic! I did the shortened version because I started cooking way too late and here it is 11pm at night and I am having my second serving! I used half and half and only 2 lbs of zucchini because that is all I had. Added flour with the onions before the rice and then baked it foreeeeeever. My oven is a bit messed up though, but it turned out great! I wish I had added some chili flakes, but that is a personal preference.
