We make this often and love this recipe. We like 2 cups of rhubarb- this is our only change. Sometimes when we are short on rhubarb we mix in a different fruit like raspberries or small diced apple (we don’t like the typical strawberry/rhubarb combo). Also have used this recipe with straight raspberries. Delicious! My 7 and 10-year-old help with this recipe and it always turns out great.

I tend to agree with the previous reply that I’d just go sans noodles, but if the point is that you *miss* the noodles, you might try shirataki noodles (sometimes marketed as wonder/miracle noodles). They’re made from some kind of starch that I think we mostly don’t digest (so I’m told you shouldn’t eat too much all at once before you know how your digestive system will react), but they’re a traditional Japanese noodle that is low-carb-friendly. In reply to Nicole. I too had a very difficult time with the dough. I rested it for at least an hour and it was very stiff and I contemplated pulling out my pasta roller as well! I didn’t pull out the roller, I just powered through will rolling it out by hand, but I won’t use this dough recipe again. I had previously made pelmeni with this dough, which I do recommend: https://natashaskitchen.com/russian-pelmeni-recipe-new-dough-recipe/ It makes a ton, but you can easily cut it in half.
