aspergillus oryzae: overnight oats + bread, koji, miso, sakadane

aspergillus oryzae: overnight oats + bread, koji, miso, sakadane Submitted by headupinclouds on December 20, 2020 - 3:40pm. Aspergillus Oryzae is at the heart of many delicious East Asian ferments, including miso, tempeh, sake, etc.  I have been reading through The Noma Guide to Fermentation, where Rene Redzepi and David Zilber of Noma fame lay out a number of aspergillus oryzae ferments critical to much of the success of their restaurant.  This is really a fusion of a culinary prac...

Freedom of the Press: Inside Former Washington Post Editor Ben Bradlee’s Georgetown House

Ben Bradlee, the famed Washington Post editor and bon vivant—played by Tom Hanks in The Post and Jason Robards in All the President’s Men—probably wouldn’t recognize his old Georgetown residence. Remodeled in an elegantly succinct style that’s far more European than preppy, it’s still nonetheless his kind of place: the double living room is designed for hobnobbing, the dining table stands ready for a crowd, and every room is filled with family mementos, a pair of water skis included. What’s more...

Energy-efficient design for mmWave-enabled NOMA-UAV networks

Combining NOMA with mmWave technology in UAV communication networks is promising to enhance the network performance. Spectrum-efficient mmWave transmission schemes have been extensively investigated in existing literatures. However, energy efficiency is of paramount importance for UAVs due to their limited energy storage. Recently, researchers from Dalian University of Technology have developed an energy-efficient design for mmWave-enabled NOMA-UAV networks by jointly optimizing the UAV placemen...

Restaurants and diners embrace the once-scorned QR code as they accept the new no-touch reality

QR codes are popping up at restaurants around the world as business owners consider new ways to keep diners and employees safe. Acceptance of QR codes has waxed and waned over the years but some tech CEOs think this is the moment for diners and restaurants to embrace them. Tech companies like BentoBox and Thanx have created their own QR code-based systems for restaurants.  Visit Business Insider's homepage for more stories. "Order from your phone," the cheerful table card reads. "Open your c...

Q: Dear 100 Hour Board,I know similar questions have been asked in the past, but its been awhile and there are many new writers. What are some of your favorite podcasts and why? I'm into "LDS Perspectives" and "Better Than Happy" because they are awesome and interesting and I tend to prefer podcasts that stay under an hour. :D-Podtastic (or Podophile, but it's a little weird and too close for comfort) A: Dear Tide Pod,  I listen to a lot of podcasts. Foraging for Booze

A story about foraging on “CBS Sunday Morning” caught my eye. It’s called “In Denmark, a Quest for New Spirits.” We’re told that Lars Williams of Empirical Spirits in Denmark is “trying to totally reimagine alcohol,” asking “if agave can become tequila and juniper berries can flavor gin, what other spirits are yet to be discovered?” He said, “We’re also trying to show that alcohol can be more than a gin and tonic at the end of a hard work-day, because it’s such an amazing vehicle for capturing a...

Watch the delicate process of preserving a 200-year-old daguerreotype

I’ve always been fascinated with the conservation process and how delicate and complex it is. And if you’re anything like me, you’ll enjoy this video from The Museum of Modern Art. In this video, conservator of photographs Lee Ann Daffner will guide you through a process of conserving one of the oldest objects in NoMA’s […] The post Watch the delicate process of preserving a 200-year-old daguerreotype appeared first on DIY Photography.

Steal This Look: A Nordic-Inspired Holiday Table, DIY Candelabra Included

Inspired by the moody atmosphere of Noma in Copenhagen, I set out to create a tabletop with a muted Nordic palette for my next dinner party. Noma-style, I draped my dining chairs in sheepskin and covered the table in a canvas drop cloth topped with a wool runner. Working with a muted palette of grays and blues, I realized I needed something metallic (and inexpensive) to add a bit of glimmer to the tablescape. Photography by Alexa Hotz for Remodelista. My Best Travel Moments of 2019

Every year, I love looking back at the best travel moments. What were the moments that I’m going to remember for always? I write them down and document them on the site so I can always look back at them when I need a smile. I began the year thinking that I was going to maintain a lower level of travel while living in New York. “Let’s not poke the beast,” I wrote in 2018, thinking that I had finally found what worked best for me. The year certainly began that way, with a weeklong trip to Me...

Holiday Gift Guide 2019: 11 Cookbooks to Wrap and Give

Left to my own devices, I tend to have a cheese plate and wine for dinner. Even so, cookbooks line my bookshelves, and I like to get into bed and page through one at night like I would a novel. This year’s selection of cookery books, culled from the year’s best-of lists and our very own wish lists, are every bit as beautiful as they are filled with excellent recipes. There’s also a thread here we can get behind: sumptuous, good food that’s also simple and stress-free, laid-back enough for weekni...

For the Hostess Procrastinaire: 10 Useful Tips for Stress-Free Entertaining

We needn’t think about entertaining in a binary way: either a fully tricked-out fancy dinner party that requires wedding-level execution or a super-casual gathering that has the vibe of a Super Bowl shindig. There’s room for a bevy of other types of parties, and, to me, the sweet spot resides in that in-between area. From Designing Trashcans to Luxury Hospitality: The Story of Vipp's Glamorous One-Room Hotels

Tucked away across a bridge in the center of Copenhagen, Denmark lies the largest hotel room the city has to offer: the Vipp Loft. You might recognize Vipp's name from the classic trashcan design that put them on the map exactly 80 years ago. "My grandfather made the Vipp trashcan for my grandmother's hairdressing salon 80 years ago, " recalls Vipp CEO and third generation owner Kasper Egelund. "It was simply an industrial product with a very specific purpose." "At a car dealership, you can touc...

Catching up with Josh Kramer

by Mike Rhode Next week, I'll be moderating a Nerds in NoMa panel on March 12th on "Comic Converts: The World of Comic Illustrators in D.C." One of the attendees will be Josh Kramer, and it's been 6 years since I talked to him for the City Paper, so it was time to check in with him again. You've kept doing cartoon journalism in those years, although I think you moved to the midwest for a while. Is that correct? Yes. I was a 2017 Knight-Wallace Fellow ...
