Inside the Epicenter of the Pandemic Baking Boom at King Arthur Flour

Marker’s David Freedman has a great look at how Vermont’s own King Arthur Flour has dealt with a massive increase in demand for their best-in-class flour and other challenges during the pandemic. The piece is a textbook example of what Tim Carmody calls the systemic sublime. The company knew something weird was going on when they noticed a 600% sales jump almost overnight and started seeing different kinds of questions coming into their consumer call center. Crumb Submitted by heidiwilliams on April 24, 2020 - 7:56am. Hi there! I have been baking the Norwich Sourdough from the Wild Yeast Blog almost exclusively for the past few years. It is my go-to sourdough. I have a question about crumb. My bread always tastes good and has a good texture, but the holes in the bread are always so much more dense at the bottom than the top. I’m just wondering if anyone has input on what I may b doing wrong.  Thank you!Note: in her recipe she make...

Julian of Norwich – ecstatic mystic and radical lover

I find that all emotion is ecstatic - we need not judge one over the other or say one is negative/positive. When felt in the natural state ecstatic expression happens with all emotions. It's a sort of orgasmic living and it puts sexual intercourse in perspective as nothing particularly special. Life is ecstatic when we surrender entirely.

This animated short about a horse is adorable, existential, and relatable

This is exactly how I've felt while cooped in my house these last few weeks and yes I mean "exactly." The 2-minute film was created by AJ Jeffries, a 3D illustrator and animator based in Norwich in the UK. The only description or explanation given for it is this: "A horse struggles to exist." That feels like it's vague or underselling, after watching this mesmerizing cartoon several times over, I think it's actually perfect. Horse [AJ Jeffries / Vimeo]
