I made this a couple nights ago using chopped local strawberries on their last legs, and a half pint of blueberries — squeaked up to barely 3 cups of fruit, but MAN is it good! Didn’t do the glaze yet but might for the remaining 1/3 (that is all that’s left!). I like using lite coconut milk in a can for this recipe; it has the texture needed to say “this is pudding” but isn’t as rich as full-fat coconut milk — there’s enough richness from the solid chocolate imo. Lite coconut milk also doesn’t have as strong of a coconut flavor as full-fat coconut milk.
