Delicious! I can’t digest dairy and was worried the substitutions wouldn’t work, but they did. I used Miyokos vegan butter [it doesn’t always work in pastry], Forager vegan sour cream, and as always whole wheat pastry flour. For the filling, I used Kite Hill vegan ricotta [also works great in lasagna], and follow your heart shredded vegan parmesan. Here in Washington state I drove out to the farm for my first asparagus of the season last weekend. I made my husband eat it alongside tacos tonight – we will eat it nearly every night for a while. I do the same thing with sweet corn – if people want more variety rather than always eating my favorites in season, they can cook. I’m making this as soon as I get to the store for ricotta!

I have made this recipe several times, and it is one of our favorites. Today I experimented successfully by making it as a bar cookie. I doubled the ingredients, spread the batter into a 9×13” metal pan sprayed with Pam, and baked in a 350 F oven for 30 minutes. They came out deliciously with very little time or effort. I followed Deb’s mixing procedure exactly, but I did not chill the dough.

In reply to Rebecca Freedman. Cornstarch and solid chocolate are doing the thickening here, not the milk. Texture, aka creaminess, will be affected by the milk you choose. But solid chocolate helps with creaminess too. I have never tried this with oat milk. Many vegan milks have an off-putting aftertaste when heated or otherwise used in cooking, so in general I shy away from them for anything other than cereal (not even in coffee). Happy New Year! Finally made these. Used about 2/3 barley flour and 1/3 whole wheat flour, because that’s what I do, and used lite coconut milk and earth balance because I can’t do dairy. Accidentally forgot the egg and when mixing they were dry I added more coconut milk…and only then realized my mistake…and then proceeded to incorporate the egg by hand. We love them. Even though we can’t host people yet, can I still pat myself on the back?
