Land of Plenty

Have you ever tasted arugula so crisp, so impeccably fresh, that it could only be described as “juicy”? Voracious salad eater that I am, I was sure I had exhausted every variant of leafy fodder available on the market, until I forked into the baby greens from Plenty. Before this moment, brand name vegetables or plain packaged produce in general always seemed like a marketing gimmick to me. Wasn’t this the same stuff you could buy in bulk, now dressed up with designer graphics and enhanced prici...

Tokyo's public toilets may be transparent – but at least they're building some

Going to the toilet used to be a public activity. Will Japan’s see-through stalls take us back to the days before the S-bend brought lavatories indoors? At the Happiness and Prosperity service station in the rural reaches of Sichuan province, I prepared to face the public toilet. We had been driving for hours, and my need was urgent, but I still hesitated. Not because the service station was unclean: the restaurant was pristine, and the food cheap and fabulous. It was because of the doors. There...

People stranded on rooftops by rain, flooding in China

Authorities deployed helicopters in western China on Tuesday to rescue people stranded by flooding as heavy rain swelled the Yangtze and other rivers to dangerous levels, state media reported. Neighboring Sichuan province and Chongqing municipality both declared the highest-level flood control emergency, a first for Sichuan. In Sichuan, water lapped at the toes of the Leshan Giant Buddha — a towering 8th-century statue carved into a mountainside — for the first time since at least 1949, a gove...

Traditional fermented foods

Fermentation is an ancient culinary technique used around the world. It was originally developed to preserve food during harsh winters and food shortages before the time of refrigeration. Vikings traversing the oceans on long voyages needed a supply of edible fish so they didn’t starve while at sea, so they invented lutefisk. Too dangerous to fish on the ice in the winter? The Inuit people have an answer: Stuff a seal carcass with birds and bury it underground until it ferments. And if you’re...

Bacteria in Chinese pickles can prevent cavities -- Ben-Gurion University study

Prof. Ariel Kushmaro of the BGU Avram and Stella Goldstein-Goren Department of Biotechnology Engineering and the Chinese research team evaluated 14 different types of Sichuan pickles from southwest China. They extracted 54 different strains of Lactobacilli and found that one, L. plantarum K41, significantly reduced the incidence and severity of cavities. K41 was also highly tolerant of acids and salts, an additional benefit as a probiotic for harsh oral conditions. It also could have potential c...

Doorstep delights: why front gardens matter

A place to socialise, an oasis for wildlife, a gift to our neighbours – a front garden can be all of these things. Isn’t it about time we showed them some love, asks Clare CoulsonLast month, with more time at home than usual, Charlotte Harris, one half of the landscape design duo Harris Bugg, decided to dig up her paved front garden in Newham, east London. “It was a discussion we’d been having for a while,” says Harris, who gardens with her girlfriend Catriona Knox. Matriarchal and matrilineal society

There’s a lot of talk about the patriarchy in the West. King Edwards have, historically, outnumbered Queen Elizabeths. Even the most recent editions of history textbooks are noticeably absent of American female presidents, and any printed before 1971 might make reference to Swiss suffragettes still fighting for a woman’s right to vote. The same is not true everywhere in the world. Matriarchal and matrilineal communities from Costa Rica to Kenya to the southwestern Pacific have entirely differ...

China detects African swine fever in another pig truck

China's agriculture ministry said on Tuesday it had detected the deadly African swine fever virus in pigs transported to the southwestern province of Sichuan, the latest in a dozen such cases in the last two months. China has been battling African swine fever since August 2018, after the disease spread rapidly throughout the world's top pork producer, killing millions of pigs and sending pork prices soaring. "The government has easier access to pig transport trucks than having to rely on farme...

Dryness, sudden winds factors in deadly China forest fire

Chinese officials say dry conditions, high temperatures and a sudden change in wind direction all contributed to the deaths of 19 people in a forest fire in mountainous southwestern China. The official Xinhua News Agency said late Tuesday that thousands of firefighters were still battling the blaze near the city of Xichng in Sichuan province. Another three people were in stable condition after going missing early Monday with the 18 firefighters and their guide whose bodies were later found.

Different types of Asian broth

While watching reruns of Chopped recently, I encountered a moment that made my skin crawl. Bear in mind, this is not my typical reaction to Chopped, a show that normally, despite its extremely chaotic energy, helps me relax. But not on that day. One of the chefs opened her basket and announced to the camera that she would be preparing what she called an “Asian broth.” I had to hit pause on the episode and take a deep breath. There is no such thing as Asian broth. There are 14 countries in Eas...
