Bulk times & volume increase

Bulk times & volume increase Submitted by algebread on April 22, 2019 - 3:25pm. I'm a (moderately) longtime reader of this forum (2 years or so), but an infrequent poster.I have two puzzles that I think may be related, and I was wondering if the community had any thoughts on them.(1) My sourdoughs often take much longer in bulk than other people say.(2) When I allow the dough to rise to what looks like about 30% (hard to judge in a bowl, and I do not have a straight-sided container ...

What went wrong? This was supposed to be a sandwich loaf!

What went wrong? This was supposed to be a sandwich loaf! Submitted by DesigningWoman on April 17, 2019 - 8:59am. Big befuddlement! I wanted to make a sandwich loaf for a friend and followed Trevor's recipe, which seemed easy enough. I halved the recipe to make one 21cm loaf. The only thing I did differently was to let it bulk at room temperature for an hour before retarding it overnight (he does say in the comments that the dough can handle a retard of up to 24 hours). Took i...

Marbled Champlain....

Marbled Champlain.... Submitted by not.a.crumb.left on April 9, 2019 - 1:59pm. I always enviously looked at posts on IG and here when I saw marbled loaves. They remind me so much of baking "Marmorkuchen' with my Mum and evoke some of that feeling making it as a bread. I remembered a thread where Dan experimented with chocolate malt.I could not get any so just used some dark roasted Barley malt instead with some cocoa nibs that I had in the larder and grounded. I mixed a Champla...

Tartine dedication..

Tartine dedication.. Submitted by Bread1965 on March 3, 2019 - 4:17pm. It's been a long last year and my starter - Charlie - has been pretty neglected. I'm finally getting back into baking some nice bread. I didn't have any whole wheat flour in the house, so made a Tartine basic country loaf using unbleached locally milled bread flour.  I used coil folds instead of stretch and folds inspired by Trevor's technique. During bulk the structure really seemed to develop well.  I gave it a...

Cleveland Indians star pitcher Trevor Bauer has been making headlines in the past week. For the second year, Bauer went to arbitration over his contract. 'Iron Man 3' Finds Its Hero in Crisis

None One question loomed over Iron Man 3 (Shane Black, 2013) from its inception: Why doesn't he just call the Avengers? After all, Tony Stark/Iron Man had just appeared in the biggest superhero film of all time, a team-up consisting of him, Captain America, the Hulk, Thor, and the combined resources of SHIELD (including Nick Fury, Black Widow and Hawkeye). How could the filmmakers devise a serious, dangerous scenario for the character in which he would not call his super-friends? Longtime comic...

Gear Ho'

This McSweeney's piece, the lamenting monologue of a tactical backpack being dragged through the mundane life of the office worker is absolutely hilarious:"Last week my grandfather found out a backpack my age was part of the Osama bin Laden raid, and his words still echo in my ears.
